Daunted by the need to knead I hadn’t tried to make bread until this summer, when staying with friends in Devon I had my first experience of the simplest recipe with excellent results. Try it. You will get plenty of satisfaction…


  • 500 g Spelt flour
  • 500 m warm water
  • 1 sachet of dried yeast
  • 1 teaspoon of baking powder
  • Salt
  • Honey

Alternative flavours

  • Nuts/seeds/apricots
  • Rosemary/olive/sundried tomato/garlic
  1. Mix salt, honey and water together
  2. Add to the flour & yeast and baking powder
  3. Mix together
  4. Let it rise for 1 hour (covered under cling film and out of a draught in a warm place).
  5. Tip into the tin
  6. Bake at 180 for 40 minutes for the loaf tin and 20 minutes for the rolls
